• 2 onions
  • 2 tbsp olive oil
  • 2 red bell peppers
  • 3 cloves of garlic
  • 2 tbsp of Lord’s Salsa Roja
  • 2 tbsp of tomato paste
  • 1/2 tsp cumin
  • 1/2 tsp Coriander seeds
  • 1/2 tsp smoked paprika
  • salt and pepper
  • 400g of crushed tomatoes
  • 2 tbsp parsley
  • 1 tbsp coriander
  • 4 eggs
  • 100g crumbled feta
  • 100g chickpeas
  • 500g black olives



1. Mince the onions, the bell peppers and the garlic. Chop the parsley and coriander.

2. In a big pan, heat up the olive oil and cook the onions, the garlic. Add the tomato paste. Cook for 2 minutes. Add the bell peppers and cook for 10 minutes.

3. Add all the spices, the crushed tomatoes and the Lord’s Salsa Roja. Season with salt and pepper and cook until it reduces a bit, about 10 minutes.

4. Add the chickpeas, the olives and the feta. Cook for another 2 minutes.

5. Break the eggs into the pan and let them cook without mixing. Cook them to your liking.

6. Sprinkle parsley and coriander, add salt and pepper and Lord’s Salsa Roja to your liking.

7. Enjoy !
